Chef's Chicken Cacciatore


Ingredients:

1 medium chicken -- cut up
1 tablespoon Chef Alberto Italian Seasoning
2 cloves garlic -- chopped
1/2 tablespoon oregano
1 tablespoon parsley
1/2 cup dry white wine
3/4 pound fresh mushrooms -- sliced
24 ounces diced or crushed tomatoes
1/2 cup green olives


Season chicken with Chef Alberto Italian Gourmet Seasoning. Brown in heated skillet in oil. Add onions, garlic, oregano and parsley, simmering until onions are glossy. Add wine and simmer a few minutes. Add mushrooms and tomatoes, cover and cook until meat is tender. Add olives. Serve over mostaccioli noodles. Serves 6.
