Chicken Vesuvio


Ingredients:

2 fresh chickens (cut each in 1/8 pieces)
2 large potatoes (cut 3" by 1")
1 1/2 tablespoons Chef Alberto's Italian Seasoning
1/2 cup olive oil
1/4 cup vegetable oil
2 tablespoons fresh ground parsley
6 cloves minced garlic
1 tablespoons oregano
1/2 cup white wine


Brown potatoes in oil in large skillet, then set potatoes aside. Season the chicken lightly and saute the chicken in the same skillet until golden brown on all sides. Add potatoes to chicken and bake in pre-heated 400 degree oven for about 20 minutes.

Take skillet out of oven and add the dry ingredients. Toss lightly to coat the chicken and potatoes, then bake for 10 minutes. Add the wine but be careful of flare-up. Place chicken and potatoes on heated platter and pour sauce over food.
