Herbed Alaskan Salmon on the Grill


Ingredients:

4 Alaskan Salmon Steaks -- cut 1" thick
1 teaspoon Chef Alberto's All Purpose Seasoning
1/3 cup olive oil
1/4 cup white vinegar
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1 teaspoon Worcestershire sauce
1 teaspoon shallots -- minced
1 teaspoon dill weed
1 teaspoon fresh chives -- chopped
1 teaspoon fresh thyme -- chopped
1 tablespoon fresh parsley -- chopped



In large bowl combine all ingredients - except salmon & parsley for marinade and sauce. Add salmon steaks and cover with plastic wrap and refrigerate 1 hour. Remove steaks from marinade and reserve marinade. Brush steaks with olive oil. Place fish on lightly oiled cooking grill or basket and cook on direct high heat. Brown both sides - 5 to 6 minutes. turning over once. Place fish steaks on warm platter. Heat reserved marinade, add chopped parsley. Spoon herb sauce of salmon, serve with lemon wedges. Can also be sued for Halibut, Fresh tuna, Swordfish, Bass, Lake trout and whitefish. If fresh herbs are not available substitute dried at half the amount. Serves 4.
